The Geprek Chicken Version With Sambal Matah:

Ingredient:

  • 300 g boneless chicken
  • 1 tsp salt
  • 1/2 tsp pepper powder
  • 2 cloves garlic, grated
  • 2 egg whites, beat until foamy cooking oil

Flour Layer:

  • 70 g wheat flour
  • 30 g rice flour
  • 30 g cornstarch
  • 1 tsp pepper powder
  • 1 tsp garlic powder
  • 1 tbsp powdered chicken stock
  • 1 tsp salt

Cayenne Pepper:

  • 20 pieces of red chili
  • 3 cloves of garlic
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 2 tbsp hot oil


How to Make Chicken Geprek Jogja Indonesian:

    1. Cut the chicken into medium size. Toss the chicken pieces with salt, pepper and garlic while kneading. Set aside.

    2. Flour Layer: Stir all ingredients until well blended.

    3. Dip the chicken pieces into the egg white then roll in the Flour Coating while pressing until the flour sticks.

    4. Repeat once again and do the same with the rest of the ingredients. Let it dry for a while.

    5. Heat plenty of oil over medium. Fry the breaded chicken pieces until golden brown. Lift and drain.

    6. Rawit Sambal: Grind chilies, garlic, salt and sugar until slightly smooth.

Flush with hot oil used to fry the chicken, mix well.

    7. Put the fried chicken pieces in flour on top and press with a pestle until slightly bruised and serve.
